    Just a hint for those who might not like the texture of the almond flour cakes and breads: let the batter rest, without the bkg pdr, for at least 4 hrs so the "flour" hydrates. The reason is that it's NOT true flour. It's crushed nuts really, and the pieces need to get softer so they can be better blended with all the other ingredients during the baking.
    I often bake with nut "flours" but no one can tell because I let them soak in either the recipe water or the nut milk before I add the rest of the wet ings. If it wasn't for the non-sugar sweeteners, my son and his friends couldn't tell the difference between these and regular flour.

    For anyone trying to avoid aspartame...Make your own strawberry jello... Super easy... Strawberry koolaid packet, sweetener of choice, gelatin, water. I guess it still has the red food dye but at least you can choose your sweetener.

    When I make regular Jello cake I freeze the cake then pour the hot jello in. It goes into the holes easily but since its froze it don't make the cake soggy because the Jello sets faster.

    Wes, I have to say that I watch a lot of RUclipsrs do their taste tests, and it is invariably my least favorite part of their videos-and I always ask them (though they can’t hear me), “Why the heck would I want to watch you taste something?” Not so for you-I love to watch you try your creations. I’ve been watching you a long time, and when you get “the look” that says “this is awesome,” I’m right there with you! :)

    Oh my goodness, so I stopped doing keto about two years ago, maybe more and I have gained more way in the last two years than I ever have in my life. I have been so miserable, so I’m jumping back on the keto wagon.

    For those interested, Amazon carries a supposed keto sugar-free jell-o under the Simply Delish brand. It's sweetened with erythritol and colored with beet (this is the only no-no). It's also plant based (not gelatin, which is animal based). The only other questionable ingredient is carrageenan.

    Love your comparison videos and appreciate all the work you put into them. I think it would be helpful if you cut a slice that actually represents the calorie count per serving. It is hard to imagine what an accurate small piece looks like. The large slices look pretty but may not be worth the bigger amount of calories no matter how good. I do low carb but find I can’t ignore calories particularly when it comes to desserts which are easy to overeat just like their sugar/flour counterparts. Thanks again for all your helpful content.

    To get 30 servings out of a 9x13" pan, you need to make the slices approximately 2x2". Roughly the size of a brownie (although I make my brownies 1x1" and get 16 servings from an 8" pan).

    I just shared with my mom because while my mom and step dad aren't keto like I am they are trying to be low carb for medical reasons same as me and won't give up sweets any more than I will. Though I usually get my sweet kick from teas, fruit, sweet veg, and yogurt bowls/smoothies. I do like my occasional dessert like these as a treat. That said, recipes like this I think would help my mom and step dad transition from standard diet since they are more stubborn creatures of habit than I am. I love ur food battles and reviews. It gives me ideas sometimes to try for myself as well as ways to hopefully help my parents improve their own health

    you did cut a bigger serving size cake on the poke cake so the carbs count change. but I look at your size and calculate it's about 6 to 7 net carbs per serving. not the 2.6

    The only concerning thing about the poke cake is Jello contains maltodextrin, which is made from corn, wheat, rice or potato starch and has a very high glycemic index. It's can easily spike your glucose and throw you out of ketosis, if you are aiming for weightloss.

      Make your own strawberry (or whatever flavor trips your trigger) jello - it's do-able from fresh or frozen fruit, OR freeze dried fruit powder and gelatin

      The sugar free Jello I buy in Canada is sweetened with aspartame and acesulfame-potassium (declared safe by the USDA) is 0 carb.

    The word poke (to make holes or indentations) and the word poke (Hawaiian word pronounced po-kay) should really have some sort of better distinguishing characteristics. I saw poke cake and thought eeeuuu, fish with whipped cream?

I'd actually rather make the coconut one, but I bought the jello to make a strawberry refrigerator pie with and then got lazy and just shared the strawberries and whipped cream with my dog.     Would it be possible to heat real strawberries with swerve or allulose then add unflavored gelatin for the berry poke cake vs the asparatane?

    I want to make all of your baked goodies, and love watching all of your videos so much!! But erythritol freezes my mouth (And for some crazy reason makes me really tired the next day after eating it, the white or brown sugar options, and all blends with it in it) Do you, or anyone on here, have any other options that measure the same or might work for me? I neeeed sweets sooo bad 😭
    *Or will this cook up the same if I just leave out the sweetener? And then maybe I can just sprinkle a little of my go to on afterwards?

    Wow! I just watched your pecan pie video and then jumped to this one. You look great congrats! I lost about 60-70 pounds within the last year myself! Cutting out sugar for sure was great for me!

    This is my second time to make Caroline’s coconut poke cake. It’s in the refrigerator now.
    Watch in your face on the taste test is very much like mine. Crack me up you had to walk away from the camera.
    I got the recipe for the cream cheese almond cake and will make it next !

    I wonder if there is an alternative to the sugar free jello that doesn't contain aspartame? My biggest issue with aspartame, sucralose, etc. is what they do to your gut biome. Erythritol, allulose, monkfruit are natural sweeteners and from things found in nature. Aspartame and sucralose are totally artificial and are from accidents resulting from attempts to make insecticides or fertilizers or other things that were not for human consumption. Great video. Always nice to see one of your video alerts pop up on my table. 😊

      You can use a clear gelatin like Knox and some kind of fruit juice

      @@HighfalutinLowCarb I've never have any luck with anything involving gelatin that isn't commercially packaged like Jello. 😂 I can make keto pudding but a jello sub, yeah, no. 🙄

      Amazon carries a supposed keto sugar-free jell-o under the Simply Delish brand. It's sweetened with erythritol.

    Coconut cream sounds good not crazy about strawberry jello artificial flavor maybe raspberry?

      I think almost any flavored jello would work well. Lemon or raspberry, especially!

    What brand of stainless sauce pan are you using, Wes? I’ve looked everywhere for pans without a separate disk on the bottom?
